Hokkaido. Dairy. ROYCE'. These 3 words go hand-in-hand ...

Hokkaido. Dairy. ROYCE’. These 3 words go hand-in-hand. ROYCE’ are recognized Nationwide, if not around the world, as producing some of the finest Japanese chocolate made with the amazing Hokkaido Milk. ROYCE’ was established in Sapporo in 1983. Over time they have enriched their techniques and experience, dedicated to making delicious chocolate of world quality in Hokkaido, where the climate & clean air are well suited to making confectionaries.

The fundamental principle of Royce’ has been, and always will be, to painstakingly source for high quality ingredients. This is a vision that J-Sekka shares, to source and provide high quality, local ingredients.

We are now featuring a ROYCE’ chocolate plate at Sekka Dining & Maki Lounge, where you can sample a range of their delicious chocolates. For just ¥700 you can try Caramel, Honey & Coffee Prafeuille, which are a thin chocolate disc containing a molten liquid centre; Caramel Milk & Creamy White button; Hazelnut & Cacao nib cookie, cacao nibs being the roasted & shelled cocoa beans, giving the cookie a nice crunch; Kokutoh black sugar molasses chocolate and Gianduja which is a sweeter, creamy chocolate containing hazelnut paste, coated macadamias.

I have to say there really is nothing that compares to fresh, Hokkaido milk. So creamy, fresh & full of flavor, it's like the Wagyu beef of the dairy world.

I have drunk milk all around the world, in 5 of the globe’s continents, and I have to say there really is nothing that compares to fresh, Hokkaido milk. So creamy, fresh & full of flavor, it’s like the Wagyu beef of the dairy world.

We discovered some interesting new Hokkaido milk products this Autumn at the annual Kanko Bussan Hokkaido Food Fair. Of course a sampling was in order before these new items were featured in the deli.

Of course, they were all good … So you can now see these delightful little Hokkaido Milk chocolates & ROYCE hot chocolate for sale in the deli.

pick up jars of Dennis the Dutchman's Jalapeño Pickles at Sekka Deli ...

Chili’s, not something you really see in Japan .. certainly not the hot type. We order some red chili’s which we use on the Mozzarella salad at Sekka Dining and they come in at a whopping 8,000yen per kg (nearly US$100 per kg!!).

So refreshing that you can now get some genuine jalapeño chili’s grown at Niseko Green Farm during the Summer & Autumn months. Never fear, if you aren’t lucky enough to be here during that time you can still pick up jars of Dennis the Dutchman’s Jalapeño Pickles at Sekka Deli. The Jalapeño chili’s are simply sliced and pickled in a vinegar / water / salt mixture allowing the true flavor, & mild heat, of the chili to shine. A medium sized jar will set you back only ¥850 and make a great addition to pizzas, tossed through salads or to spice up your favorite sandwich.

the cauliflowers are all sliced into a thin little forest of trees to ensure even cooking ...

Cauliflower, oh cauliflower. Their distinct nutty flavor complimenting Hokkaido Diver Scallops so well …. Boxes of cauliflower were recently turned into a delightful, creamy soup. But first, the cauliflowers are all sliced into a thin little forest of trees to ensure even cooking.

Before being added to sauteed onions & garlic, that have been cooked over a long heat until translucent. Then the cauliflower is added along with Hokkaido Takahashi Bokujyo farm fresh milk and simmered until the cauliflower is tender. Blended and seasoned with salt & pepper the creamy soup was served topped with seared Hokkaido diver scallops & local salmon roe.

This Autumn we held 2 very different wine tastings in Maki Lounge ...

This Autumn we held 2 very different wine tastings in Maki Lounge. Firstly, we were lucky enough to host Mike from Terra Vin in New Zealand. In the words of Mike: “TERRA (Latin for LAND) VIN (French for WINE) describes, for me, the relationship between the land that we are privileged to care for, the vines we choose to grow and the lives of the people that are involved in all aspects of creating a special wine”.

It was a pleasure meeting Mike in Niseko, and getting to taste all of his wines while having him there to answer any questions and discuss with us flavor profiles of the wine. So refreshing to see someone so passionate about what they are doing and really pushing the new world wine industry to new levels. We hope to see you, & the family, back in Niseko soon !!

The following week we had a very different wine tasting event in Maki Lounge. All Japanese, including some Hokkaido, wines. Each bottle looks like a showpiece, but unfortunately the product just isn’t there yet … especially for the price they have to charge for them. I found 1 fortified wine I liked, and a red from Nagano down south that was also quite passable.

Terra Vin wines are available throughout the J-Sekka building, including Maki Lounge, this Winter season. As for the Japanese …. well, let’s just say Japanese Whiskey, Draft beer, rice wine as well as plum wine will be available in Maki Lounge this year. We will let them have a little more practice with the wine
